I — The Legend

The winged heart

"The elders say the agave holds a soul; when the embers embrace it, that soul rises — with halo, with wings, with arrow — and stays alive in the glass."

KUZCA is born from that Oaxacan belief: mezcal is not made, it is invoked. Our emblem — a winged heart bearing the light of the sun and the shadow of the bat — honors that duality: light and night, the master mezcalero and the wild agave, the red earth of Tlacolula and the sky of the Sierra Sur.

We don't make mezcal for hurried glasses. We make it for long conversations, for records that turn slowly, for tables where time recovers its original shape: that of the kiss, not the clock.

III — The Craft

Made by hand,
measured by patience

In Oaxaca mezcal is not industry. It is craft. It is heritage. It is how a people speaks to time.

Every bottle of KUZCA passes through seven generations of knowledge transmitted in Nahuatl, in Zapotec and in silence. From the harvest of the mature agave to the final copper distillation, everything happens as it must: slow, manual, ritual.

We work with family palenques from Tlacolula, Santiago Matatlán and the Sierra Sur. To support KUZCA is to support those who have kept this tradition alive for centuries — long before the world discovered the word mezcal.

Jima

The agave is harvested by hand when it reaches maturity, between 8 and 15 years depending on the species.

II
Oven

The piñas are cooked three to five days in conical earth ovens with volcanic stone and oak firewood.

Tahona

A stone wheel pulled by a horse grinds the cooked agave. Without haste, as it has been done for 400 years.

Still

Double distillation in copper still. Only the heart of the distillate enters the bottle.

Kuzca Drunken Salsa

For meats, tlayudas and barbacoa

  • Oaxacan pasilla chile 6 pieces
  • Roasted tomato 4 pieces
  • Roasted garlic and onion to taste
  • Kuzca Espadín 60 ml
  • Crumbled queso fresco topping

Roast the ingredients on a comal, grind in molcajete and finish with mezcal at the end. The alcohol evaporates; the smoke stays.

Tobalá Tiradito

Raw fish, floral mezcal

  • Fresh red snapper fillet 200 g
  • Lime 3 pieces
  • Kuzca Tobalá 20 ml
  • Extra virgin olive oil 30 ml
  • Worm salt · costeño chile to taste

Slice into thin pieces, drench with the citrus mix just before serving. Tobalá brings a floral note that embraces the fish without overpowering it.

Oaxacan Chocolate with Ensamble

For cold nights and long conversations

  • Oaxacan chocolate tablet 80 g
  • Whole or almond milk 400 ml
  • Cinnamon stick 1 piece
  • Kuzca Ensamble 30 ml
  • Flaky sea salt pinch

Heat the milk with cinnamon, melt the chocolate, whisk with molinillo and serve. Add the mezcal at the end, off heat. Dessert, digestive and embrace.

KUZCA is just beginning its journey. From Oaxaca to Las Vegas — and the first barrels are already crossing the Atlantic to Europe.

We are in our founding stage: small batches, selective distribution, one-on-one conversations with sommeliers, bartenders and restaurateurs. Our current focus: the United States — starting with Las Vegas — and a gradual entry into Europe in 2026.

Growing slowly is part of the craft. Every case that leaves Oaxaca carries with it a palenque, a family, a mountain range. To drink us is to drink Oaxaca slowly.

We believe every mezcal deserves its own music. That's why we curate musical sessions and collaborations with Mexican and international artists, without pigeonholing into a single genre. Events where the ritual of the drink meets the ritual of sound.

From Oaxaca to Berlin, from Mexico City to New York — KUZCA appears wherever music takes its time. Intimate clubs, signature dinners, private sessions by the turntable.
